I do not have a sweet tooth, but I do love my cocoa!! These delicious energy bites are not only packed with protein, but are super easy to make and satisfy any chocolate craving. Because they use seeds instead of nuts, they are a great alternative for anyone with a nut allergy.
Cacao Nut-Free Energy Bites
1/2 cup dried pitted dates
1/2 cup water for soaking
2 TB coconut oil
1/2 cup raw sesame seeds
1/2 cup raw sunflower seeds
1/4 cup cacao
1/4 shredded unsweetened coconut
2 TB water
Soak dates in water for 30 minutes. Drain water and place dates and coconut oil into food processor. Blend until smooth. Add sesame and sunflower seeds and blend until mixture resembles bread crumbs. Add cacao, 2 TB water and coconut. Blend until mixture comes together. If it seems too dry, add a little water. If it seems to wet, you can add a bit of sesame seeds or coconut. Once mixture seems just right, you can roll into little bite-size balls. It helps if you cover the palms of your hands in coconut oil to prevent sticking. Store in airtight container in fridge.
Resist the urge to eat them all at once!!
Note: The kids didn't think these were sweet enough, but that left more for me and I think they are perfect..
