Kitchari is a traditional Ayurvedic meal made known to improve digestive health and promote healing in the body. The balancing effect of this simple recipe can be experienced after a single meal. While it can be enjoyed during any season, preparing and sharing kitchari during the season of Fall is often the perfect remedy for getting grounded.
Vegan Cleansing Kitchari
1 cup quinoa
½ cup red lentils
½ cup mung dal
4 cups of water
2 cups chopped greens (kale, spinach, chard)
2 TB coconut oil
1-2 TB CCF blend (equal parts of cumin, coriander, and fennel seed)
1 tsp turmeric powder
sea salt for taste
½ cup cilantro, (optional) chopped as garnish
Wash and drain the lentils, dal and quinoa and chop veggies. Heat the oil and sauté seeds until they pop. Add turmeric, mung dal, quinoa and water. Bring to boil and then let simmer for 20 min. or until soft. Stir in the green veggies and lentils just before the quinoa and mung dhal are done, add salt and cilantro.
